Try reindeer stew (poronkäristys), smoked salmon, Karelian pasties (karjalanpiirakka), cloudberry (lakka) desserts, and salmiak (salty liquorice). Mustamakkara (black blood sausage) in Tampere is a local institution.
Helsinki has excellent trams, metro, and ferries. Intercity trains (VR) are comfortable. For Lapland, domestic flights to Rovaniemi, Kittilä, or Ivalo are quick. Renting a car is ideal for exploring the lake district in summer.
